It’s Pancake Day!
Last year we created this delicious treat to celebrate Pancake Day and it was so good we thought we would go for it again this year. If you would like to try them too, it’s very easy….
Boil 150g of caster sugar with 100ml of cold water until the sugar dissolves, add 200ml of gin or vodka and set aside. Once cooled add 500g of blackberries or strawberries and allow to soak. You can leave it for up to three days. (We tried this but every time I opened the fridge I had another blackberry…..there were none left for our pudding!)
Serve with freshly made pancakes and a good dollop of whipped cream! Yum
Don’t waste the leftover syrup – it will be fabulous in a cocktail or with champagne!
